If there is one Italian dish that every child knows, it is pizza. With this word alone, one thinks of crispy dough, melt-in-the-mouth cheese and a spicy tomato sauce. Add different toppings and you have a quick and easy meal that everyone is happy with. It's that easy to make pizza yourself.

What actually makes a “Pizza Italiano”?

Before we can answer this question, we first have to find a definition for “the” pizza. Since we are assuming an Italian pizza today and disregarding the American variants, we are guided by the Pizza Napoletana, i.e. a flat cake from Naples. This is considered the mother of classic pizza and basically consists of 3 things: dough, tomatoes and cheese.

These 3 basics can then be supplemented with different toppings. In contrast to us in Germany, the Italians swear by as little topping as possible. This is due to the fact that the pizza was first a poor man's meal, with which leftovers and simple ingredients were processed. By the way, the ancient Greeks prepared a form of pizza. At that time, however, only the dough was seasoned and baked with olive oil and herbs. It wasn't until 1520, when the tomato found its way to Italy, that this simple dish became what we mean by pizza.

Things get hot in a real pizza oven. Here a pizza only needs a few minutes to be ready.

We want to explain the basics of the various ingredients below and of course have the recipes ready with which you can easily bake them. So nothing stands in the way of opening your own pizzeria - or a great evening with crispy pizza.


Make pizza yourself: First the dough

The basis for a successful pizza: the right dough! With the Italian original, this should be nice and thin, airy and crispy. This combination is best achieved with a simple yeast dough. Flour, yeast, water, salt, olive oil and a little time, you have the perfect dough. The secret: the dough must not be baked for too long. The oven should therefore be as hot as possible.

In real pizza ovens, which are heated to over 400 degrees, pizzas usually only have to bake for a few minutes or even less. In the home oven, which does not reach such high temperatures, it takes correspondingly longer.

Basic recipe pizza dough

Ingredients for 2 pizzas

  • 450 g flour
  • 20 g of sugar
  • 1/2 cube of yeast
  • 370 ml water, warm
  • A bit of salt
  • 2 tbsp olive oil

Step 1
First sift the flour into a bowl. Make a well in the middle of the flour and fill up with a little water. Crumble the yeast and add to the hollow with the sugar. Spread about a tablespoon of flour over it and let it stand for 15 minutes at room temperature.

If bubbles have formed on the pre-dough, add the rest of the water, salt and olive oil and knead everything into a smooth, elastic dough. If the dough is too moist, add a little more flour. Then cover with a kitchen towel and let rise in a warm place for at least an hour.

Our tip: To make your dough rise nicely, set your oven to 50 degrees and preheat it for a few minutes. Then turn it off and let it stand in the oven for a moment so that it loses some temperature. Then add the dough. The oven should be around 30 degrees. This guarantees the optimal environment and the dough can rise nicely.

Finally, take the dough out of the bowl and roll it out into a pizza pan on a floured work surface.

By the way: If you want the pizza to be extra crispy, swap half of the flour for durum wheat semolina (semola).



The perfect tomato sauce for making pizza yourself

Once you've got the hang of the dough, the next step is just as important: preparing the perfect pizza sauce. Usually this is a classic tomato sauce that is heavily seasoned with various spices such as oregano and basil. This forms another basis for the toppings that you want to distribute on the pizza.

Basic recipe for tomato sauce

  • 1 onion
  • 2 cloves of garlic
  • 2 tbsp tomato paste
  • 250 g of pureed tomatoes
  • 1 tbsp dried oregano
  • 1 tbsp dried basil
  • salt
  • pepper

Step 1
First peel the onion and garlic and chop them as finely as possible. You can also squeeze the garlic through a garlic press, if you have one. Then sauté the onion and garlic in a saucepan with a little olive oil at the lowest possible temperature until the onion is translucent.

Add the tomato paste and roast for a minute. Then pour on the tomatoes, add the spices and generously season the pizza sauce with salt and pepper. Now simmer for about 10 minutes so that the sauce thickens a little. Now it's ready to be spread on the pizza.


The most important thing when making pizza yourself: cheese

Finally, you need the right cheese for a pizza. For a classic, Neapolitan pizza, this can only be mozzarella. This is perfect from the taste to the "pulling behavior" to round off an Italian pizza. There is also the buffalo mozzarella, which can also be used as a topping. With its stronger taste, it provides more variety on the pizza. Many also swear by a small pinch of Parmesan on the pizza, as it should round off the dish with its salty taste.


The surface: as individual as you are

There are actually no other ingredients on an original Pizza Napolitana. But since we don't want to be so strict here and enjoyment is in the foreground, we want to top our pizza according to our mood. Salami, ham, mushrooms, seafood and more can be placed on the dough. So listen to your stomach, because it tells you what you want. But you should think twice about whether you really want to put pineapple on your pizza. When it comes to making pizza yourself, there are actually no limits.

Pizza Margherita - a classic with a story

The pizza margherita corresponds to the definition of a pizza napolitana. Your name is based on a fable. This says that it comes from the wife of the Italian king Umberto I. This was called - correctly - Margherita. During a visit to Naples, the king often saw ordinary people eating a pizza and then ordered several to his residence. The simple version with basil, mozzarella and tomatoes, the colors of which correspond to the Italian flag, is said to have tasted best for the royal couple, and so the pizza margherita was born.

Ingredients for 2 pizzas

  • Basic recipe pizza dough
  • Basic recipe for tomato sauce
  • 2 scoops of mozzarella
  • 8 basil leaves

Step 1
First prepare the dough according to the recipe above in the article. Then prepare the tomato sauce during the walking time and let it cool down a little.

Take the mozzarella out of the pack and let it drain. Then cut the cheese into slices or pluck it into small pieces. Wash the basil and shake dry.

Preheat the oven to 250 degrees. While it is heating up, roll out the dough on a floured work surface. Now use a ladle to pour the tomato sauce onto the pizza and spread it in a circle. Then spread a scoop of mozzarella per pizza on top and bake for 10 minutes. Finally, put the basil on the pizza and enjoy.

Our tip: If you have a pizza stone your own, the pizza takes about 7-8 minutes, as the stone stores the heat from the oven and transfers it better to the pizza dough. But you have to note that the oven has to preheat longer because the stone needs time to get hot. But it is the perfect solution so that the homemade pizza is really crispy.


Pizza with ham and mushrooms

Ingredients for 2 pizzas

  • Basic recipe pizza dough
  • Basic recipe for tomato sauce
  • 2 scoops of mozzarella
  • 100 g mushrooms
  • 150 g cooked ham
  • 50 g parmesan, grated
  • salt
  • pepper

A classic combination: ham and mushrooms.

Step 1
First prepare the two basic recipes for the dough and the tomato sauce. Meanwhile, take the mozzarella out of the package and let it drain. Clean the mushrooms with a kitchen towel, remove the lower part of the stalk and cut into slices. Tear or cut the ham into large pieces.

Roll out the dough, spread two ladles of tomato sauce on top and then pour the mozzarella with the parmesan on top. Finally top everything with the ham and mushrooms, season with salt and pepper.

Seafood pizza

Heat some oil in a pan and briefly fry the seafood in it. Then deglaze with the white wine and simmer until the wine has evaporated. Then season with lemon juice and salt and pepper. In the meantime, take the mozzarella out of the package, drain and tear into pieces.
